We're quite new to Dubai and we are sleeping on some of the worst mattresses. Is there a store with a large selection with various price ranges??

You can buy one at The One (Beach Road in Jumeirah - it came with the bed, best mattress I've slept on!), one at Intercoil, which is on Umm Suqeim Road, across from Mall of the Emirates.
As you say you're new to Dubai, you will also find out that the sheets that you use are not the same size as the mattress size... lol So you would be better off buying a mattress from IKEA if you find one that you like, then you can be sure to find the right sized sheets.
You can buy Latex hyper-allergenic mattresses at Ikea for a good price. If you prefer the old fashioned spring coil mattresses, they also have those. It's attached to Festival City which has a lot of shops. Quite good if you don't want to drive all over Dubai in search of household stuff.
Try Debenhams at MOE, they've got the SilentNight range. Many different mattresses to choose from at affordable prices
